Ingredients
Meatballs
  • 1 lb extra lean ground beef
  • ¼ cup milk
  • ½ cup Parmesan cheese, grated
  • ½ cup breadcrumbs
  • ¼ cup chopped fresh parsley
  • 1 large egg
  • salt and pepper to taste

Italian Wedding Soup
  • 1 tbsp olive oil
  • 1 medium carrot, chopped
  • 8 cups chicken broth, low sodium
  • 2 cups spinach, packed down and roughly chopped
  • 1 cup dry orzo
  • salt and pepper to taste
  • freshly grated Pecorino Romano cheese for serving
